It’s time to launch our new series featuring our favorite dishes from the Caribbean islands. Today’s feature is Conch Salad from the Turks & Caicos Islands. This particular conch salad comes from Da Conch Shack, located in the Blue Hills area of Providenciales. At Da Conch Shack, you can watch as they pull the conch from the sea, extract it from its shell at a table beach side, and then transport it to the kitchen where it is mixed with lime juice, peppers, tomatoes, and onions into this delicious treat. Pair it with Jan’s Infamous Rum Punch, and you have the perfect seaside lunch.
